They are deleted because I had activated the Read Receipt and Delivery
Receipt flags of the mail and I received an "Deleted without read" message
from the recipient of the original mail.

items. Best to ask about that in an Exchange group like
microsoft.public.exchange.admin.
Are you sure these messages are being deleted and not just hidden in a
filtered view?

The default setting in Outlook is to automatically delete expired messages
when the AutoArchive feature runs.
