Default OE won't open.....period!!!!

Try system restore back to before the updates, check to make sure OE
works and, this time download and install the updates from the Windows
Update web site and disable your anti virus so it doesn't interfere with
the updates' installation. Personally, if IE7 is there, I wouldn't
download it as it needs a whole lot more preparation for a successful
install than just disabling your anti virus.
