So say my mailbox is JDOE and I have a signature and another calendar (say
Help Desk) loaded in with my exchange account. Now we run the maintenance
wizard that does a MODIFY and it creates a backup of %username% profile,
along with this, we need to reselect our signature, we lost the Help Desk
calendar, and now need to reinsert the Help Desk calendar into our existing
account.
Is this suppose to happen when we modify an existing account?

You don't need to check it in both places, but it doesn't hurt to do so.
Say we have several accounts above in the list of
additional mailboxes, does this mean Outlook would cache all of those
automatically also
Only if you're using Outlook 2007, which is the first version to cache shared mailbox folders.
Is there anything else we need to worry about. We are NOT utilizing pst
files. And if someone has a Dell Axim that also syncs to their workstation,
how does cached exchange mode affect the Dell Axim users (the Dell's are set
up to sync locally instead of to the exchange server--will be need to change
this mode)?
The data is still in Outlook locally for the Axim to sync with. i
