names without email address in address line
You cannot change that default behavior globally. If you are replying to a
Contact that happens also to reside in your Contacts Folder, you can change
the format for that recipient only by editing directly the Email Display As
field for that Contact in the Contact Record.

'). Can anyone help me ?
