one of the customers intends suing me as they say they never had a
particularly important email some months ago.
They are in the right folder (about 100 email addresses), in my address
book and to all I sent the same email. However when I look at the email I
can see no way of seeing who I sent it to unless there is a way?
Please help as my ability to prove is likely to save a claim against me
for £3,000.

Select the message in Sent items and press the Ctrl key + F3, you should now
see the bcc recipients.
You can copy that.
