cut and pasting an address
When you click on an email addresses on a website a pop-up OE new message
window opens with the address (without the arrow brackets) in the “To:” field.
Selecting then copying this address into another new message window’s
“Subject:” field or message body displays the address as well as a copy
inside arrow brackets.
What I’m asking is there a setting or some other fix to prevent the address
inside the arrow brackets from being copied?

Where are you copying from? What you are copying may be the display address
followed by the actual address -- if copied from a message From line. In the
example given these would be the same. You could try pasting to Notepad,
then select and copy the address before pasting into a message to see if
this gives the desired result.
