Default Office 2007 Deployment - Using OCT

I am trying to configure our Office 2007 deployment, but I have not been able
to find the answers to how to configure the following:

show public folder in default view - Outlook
set default view in scheduling to 75% zoom instead of 100%
Use Address Card view in Outlook (not Buisness Card)
Word - default style No spaces
Excel - Add the sum function to quick access toolbar
Word - Add print to quick access toolbar

Is there a document out there, searchable with how to change these settings?
I've gone through the OCT several times and can't find these settings. If I
can't use OCT, where would I find the registry settings?

Any help would be useful.
