Default Activities tabs in public folders

You can see on the account settings whether you are using Cached Exchange mode, which connects to the server not directly but through a local .ost file.

It would be useful to get the answers to my other two questions as well. Remember that you cannot mix personal and public folders in an activity group.

Yes. We have a group for Calendar and one for Tasks, both in public folders.
I can see the Items for MySentEmail, which is local.
