Thanks for your help. BTW, it looks like when using the autocomplete the
e-mail address is only displayed until until one clicks the Send button,
then just the display name is displayed. Am I seeing all that will be
there?

There is. The way I told you works, but you aren't using it. You are using
autocompletion instead, which has nothing to do with your Contacts. It is
taking its data from the autocompletion cache, which is using the address
format you last used.
Select your recipient from the Outlook Address Book or Contacts Folder if
you want Outlook to use the Email Display As field.

If you configure the Email Display As field for the Contact you are
selecting as the recipient to show only the familiar name, that's all
you'll see in your To: field. Recipients may or may not see only the
familiar name.
