I think that by default there's a Rule that strips categories from incoming
emails in 2007. Have a look at your Rules and Alerts.

That's it: On a shared mailbox, or my own mailbox. I assign a color
category to a received e-mail message, and when I reply /reply all/
forward to that e-mail, and I look to the Sent Items folder, the color
category has not been saved.
