Default Display Map of address -

The button should map to the address in the contact even when it uses the
live map page - but will not if it can't find the address in the db - this
is fairly common with new developments but can also happen if the street
name or spelling is not exactly the same as in the db. also - make sure you
have the latest outlook patches installed.

This is the page that is created from a business in my contacts - just by
clicking the map button. As you can see from reading the url, it pushed the
address up.

again, no, you can't use S&T - if you have mappoint, it will use mappoint
on the local computer rather than live maps.
