Default Spelling checker

I don't have Tools, Options, Spelling, Ignore Original Text (Outlook Express
Version 6.00.

spell check text before or after the entire original text. (Note: if you
save a message to the Outbox or Drafts and then open it again, OE has lost
track of what was original text and will spell check the whole message.)

If you are using OE-QuoteFix, all your text gets treated as if it were
interspersed with the original, so the above applies or you need to
highlight the desired text and do a manual spell check.
