No wonder. The address book view is not intended for conducting searches.
Use either Instant Search or Advanced Find in the relevant Contacts Folder.

Perhaps I'm just being lazy here... I'm looking to send an email to a
particular person at a company, but can't remember their name. They

In my particular instance I have multiple folks at the 'Northwind'
company.
I'm using the 'company name (contact)' display name. I also have
'Northwind
Customer Support'. If I search in "more columns" or via 'advanced
find' I
only see the customer support contact.
