To change the Address Book sort order go to Tools/Account Settings/Address
Books/Change and change the Show Names By field.

Also, a secondary item, is there a way to get the contact list/address

to organize by last name? I put in people to display last name first and
even manually changed the name line to have last, first, but when you open
the address book, it shows people organized by first name.
