The problem is, if I setup a definition for that, Outlook overwrites the
e-mail address with the "John Miller" contact information and that results

jmiller address, Outlook overwrites it with the "John Miller" contact and
it's contents. How to suppress that ?

That should be solved as an individual rule for one client (and perhaps
other rules for other clients, if possible without changing the
definitions
on the Exchange server.)
