Default OL2003 won't save changes made to Outlook Today screen

Have you tried changing it in the registry instead? See
http://www.outlook-tips.net/howto/oltoday.htm

I'm trying to switch to the single column view. I also noticed that
there is a placeholder (a red 'x' in a rectangle) in the top left
corner of the single column view where I assume some sort of graphic
or icon should be. Not sure what that's about either.

I suspect it's the "Customize Outlook Today" button. Have you tried
resetting your Internet zones to their default settings on Internet
Explorer's Security tab?

Additionally, is there any way to get more than 7 days to appear
under the Calendar section/header?

If you read the web page I cited, you'll see a value for the CalDays key.
That key can be changed to a much larger value, although my experiements
show that it doesn't do anything above about 50.
