Default My boss wants to be able to respond to appointments....

Take a look at the Delegates Tab in her Calendar (right click the Calendar,
Properties). There's a setting there about sending meeting updates etc only
to my delegate. (I don't have Exchange software in my home office so I can't
tell you exactly what it says)

She wants to be able to respond to appointments but she wants the
RESPONSES to appointments that WE schedule to go to ME, not HER.

Is there some way to customize the calendar to do this?

I believe that's a setting she can control. In Outlook, see Help's
"Delegate Access Permissions" topic.
