"Stop processing more rules" is a bit of a misnomer that used to confuse me
too. It doesn't really mean "Stop processing more rules." It' means "Stop
processing more rules with THIS message."

For example, let's say you have two rules:
1. Mark everything with "quintessential" in the subject line green.
2. Delete anything with "aardvark" in the subject line.

If you don't include "Stop processing more rules" in the first rule,
anything with "quintessential aardvark" in the subject line is going to get
deleted (after it's marked green).
