Default Nicknames appearing with email addresses

The point is I use the names (I assume you mean the First/Last Name field
when you say Display Name) for my benefit within my Address Book. What I
don't want is the system using these, why can't it simply put the email
address only in the 'TO' field of the email?

After furious head scratching, Charente asked:
