In an email you are going to send, click on the Options button. In Delivery
Options, you can check "Send Replies To" and select an email address from
your contact list there.

You omitted your Outlook version, but in general, edit the email
account, and in the "More Settings" dialog, under General, you can enter
a different Reply-to address...
