Default New Computer / Old Calendar?

I've pulled the old one back over from the previous .pst file, but now I'm
back to having 2 calendars. Is there a way to copy the contents of the old
one to the blank one and delete the old one?

All depends on which method of migrating you used.
In general all you need to do is copy the previous pst-file, open it in
Outlook and set it as the default delivery location.
