Default setting line spacing in Outlook messages-always double-spaced

Having moved from Outlook 2000 to 2007 this double spacing issue is
driving me crackers. I would love to edit the NormalEmail.dtm how does
one do this?

The default Word template (Normal.dotm) is located there, too.
