In the first post is see from you, you don't mention if it’s a hosted
exchange acct. But Exchange 2007 doesn't have a control panel and none of
the other steps are the same as in the ESM, so I needed to verify.
I can't repro the problem on standard corporate accounts so either there is
something different with the hosted accounts or something else effects it.

Log into the email domain's Control Panel page on the Exchange 2007
server
Go to Configuration & Administration Exchange Mailboxes
your_mailbox
Click on Edit
Change "Show in address book" to Yes
