I am having the same problem, with my existing (imported) contacts AND with
new ones. If you have cured this please do let me know.

That's the way it works. Settings only apply to new Contacts. You'd have
to run code to change the fields for existing Contacts.
Should I consider exporting then reimporting my contacts ?
