Default Default Outlook calendar

No, you cannot designate another calendar as default.

But you can move the data from the default calendar to a designated
calendar. Display the default calendar in a table view (category works
well) and select all, then right click and drag to the selected calendar
FOLDER, then select your choice from the context menu.
