One method is to create another calendar and move the item to that calendar
until the date passes.

After furious head scratching, Teri P asked:

| I have editor delegate priveleges for someone's calendar and want to
| keep canceled meetings on their calendar. When I receive a
| cancellation on their calendar and delete the message, the
| appointment falls off the calendar the majority of the time. I am
| not selecting the "remove from calendar" option in the cancellation
| notice. It seems that some stay on the calendar when I delete and
| some fall off. It seems like I have to keep it in my inbox until the
