you provided the solution!
If one switches on the high contrast option, the possibility to get text in
colour disapears in both Outlook Express and Gmail (via IE7).
I switched the high contrast option off and improved the readibility of the
screen by using larger characters and changing various colours.
Problems solved.

I suspect that the above changes were made intentionally by the
"Expert". So you'll have to figure out which settings give the customer
the best overall experience.
