Default Same email I see Times text and my partner Arial

If its a plain text message, there is nothing you can do. The character set
and fonts are determined by the user (recipient) under Tools | Options |
Read. If you use an HTML message, then you have to explicitly set the font
to Arial 10 for it to show on the user's system and they would have to have
that font installed.

My partner sent me an email, text is in Arial 10. If you edit the email
and highlight the text, it shows Arial 10. Saved the message as eml
and opened in my pc, shows Times New Roman.

I'd hate other people would see it in Times as me.

What's the problem? Is something with default email settings?...
How I ensure others see Arial too?
