It's easier just to forward it to the person - either by choosing forward or
sending an attachment as brian suggested.

Create a mail message and drag the appointment to it as an attachment.
They
can then drag the attachment to their calendar.

1) Delete the person from the invitation
2) Save and Close - When prompted to update attendees, select "Don't
send update"
3) Open the invitation, add the person back in
4) Save and Close - When prompted to update, select "Send updates only
to added or deleted attendees"
