A virus in an e-mail is pretty much a thing of the past. The concern is with
attachments and links. However, what you're looking for is disabling the
Preview Pane. View | Layout and uncheck it. You can also put a button on the
toolbar if you wish.
In Tools | Options | Security, run OE in the Restricted Zone and note the
other virus protection options. And make sure your anti-virus is kept up to
date.
