Default What happened to my user-defined fields?

#1 - First mistake......importing PST file. No need to (and absolutely
shouldn't) do that for all kind of reasons. Just needed to open your
existing PST file in Outlook '2007 and make it the default.
#2 - User1-4 are not "user-defined fields" - simply 4 standard Outlook
fields without a designated purpose called User1-4 - part of every contact
item
#3 - the user-defined fields you created, add those same fields back at
the folder level and there is a chance that you'll see the data for those
fields again in the contacts that have data for them

If you still have your original PST file would start over (as per item#1
above). If you don't.....well..........hopefully the info wasn't important.
