If you right click on the BAK files
after compacting you have a "restore" option. If I were to move these
elswhere, then after the following day's compacting delete them and move
the
new ones (so that during compacting I would have one set of BAK files),
would this set serve as a backup should a problem occur during
compacting?

In case you have too much free space on your harddisc, yes - in case
you have an actual backup of the relevant registry settings too and
did not set up new mail/news accounts, rules, views and such.
