Every rule has an Apply Now button. That said, IMHO, it is a waste of time.
It is quicker to click on one message in the Preview Pane and then Ctrl+A
will highlight them all. Left click on the messages and just drag them to
the folder you created to save Sent messages. You're done in ten seconds.

Automatic rules only apply to incoming mail.

Your questions about MS Outlook or Eudora would have to be addresses in a
forum for those e-mail clients.

It will depend on how you wish to sort your sent mail? By year Sent
2004,
Sent 2006 etc or To Work, To Joan? Create folders and rules then apply
them
manually on a regular basis.
