Thank you for the explaination on how to mark a specific contact for
specific email formats. I followed your suggestion but the email still
defaults to HTML.
I will keep watching for further suggestions here. I am using Outlook 2003
Professional.

You can mark a contact to receive all messages in plain text format by opening that person's contact record, double-clicking the email address, and choosing plain text from the available mail format options.
There is no similar option to specify stationery for a particular person.
