Default Field Chooser destroyed the "To:" field

I was scrolling through one of my mail folders where I move move
related to a certain project. I noticed that the "To:" field was not
being displayed in the View for that folder.

In some applications, you can right-click on the column headers to add
or remove fields, so I did that. The drop-down list included something
called the "Field Chooser". It sounded perfect, so I clicked on that.

A list of fields popped up, so I scrolled down to the "To:" field and
clicked on it. Nothing happened. I double-clicked on it. A Field
Properties panel popped up. Not knowing what to do, I exited that
panel, but I am not sure how. I believe there were OK and Cancel
buttons and the X icon in the upper right. I don't recall which I
clicked on. I then closed the Field Chooser panel.

I then clicked on View and saw the "Customize current view" option,
selected it, and added the To: field.

The To: field appeared, but was empty (blank). If I open any message,
the To field in the message is also empty. I then noticed that this is
only true for messages more than about 6 months old. They all had To:
fields when they were send.

Can anyone explain what happened to the To: data and how to get it
back?

Did I do something with the Field Chooser?
