You might have to create a completely new mail profile using the Custom Maintenance Wizard tool in the Office Resource Kit to deliver a .prf file with the new profile information. I was unsuccessful in several attempts to change just the delivery location in a prf file.
For more details on .prf files, including a variety of .prf deployment methods, read the excellent white paper "Configuring Outlook Profiles by Using a PRF File" at

People,
In the past all users (about 3.000) were instructed to change their default
delivery location in outlook to a local PST File because of storage concerns.
Right now we are in process of migrating our Exchange Servers to new hardware.
How can I change the "default delivery location" back to Exchange
automatically via script or other administrative method? I can't do it
manually or ask users to change this setting again.
Tks
Rodrigo
