I would suspect that's coming about because you are replying to an HTML
message and the original message specified the Times New Roman. You can
verify that by looking at the message source (Ctrl-F3) for the original
message.
If you want to force the font in your signature, edit the HTML file for
the signature and specify the desired font there.

The default (compose) font is Arial 10 point. That is used for both

whilst the body text is Arial 10 point the signature text is Times New
Roman 12 point. I can't see where I can change this default setting.
(I don't want to change it every time it is used). Any ideas please?
