There are two ways to control the information sent:
1) remove unwanted information before you use the File | Save As command to create a .vcf file or the Forward as vCard command
2) Save the contact as a .vcf file and edit that file manually in Notepad.
#1 applies to printing. The second method for printing is to perform a Word mail merge and pick which fields to show.
