Losing colour category upon saving appointment

Default Losing colour category upon saving appointment

Exchange server, outlook 2007.

Create an appointment with a colour category, save and close. Appointment is there, with colour and category.

Re-open the appointment, category is lost and when you go to close the mail it asks you to save the changes.

Appears to happen on multiple machines but doesn't happen in outlook 2003.
Any ideas?
