Default who owns these calendar items

In Outlook 2003 at the clients, we have a public calendar set up on the
exchange server with Author permission granted to a few users. How can I
find out who entered what item in the public calendar?

Add the "From" field using the Field Chooser while viewing in a table view.
I think that's as close as you can get.

Brian's method works well - I use it in my own Calendar to so I can see when
my Assistant has made an appointment (she has Owner permission to my
Calendar).

Default who owns these calendar items

As an alternative you could use our product, Exchange GroupCalendar. A
server add-on that mirrors personal calendar info in real time to the
public folder calendar while writing the initials in front of the
subject.
It allows for rules to define exactly what kind of items (only of a
certain category or with a certain keyword) go into the public
calendar(s).
