I have a question regarding appointment that have been declined. Is there
any way to track (from the calendar) where appointments were declined? I
often have issues with people I support wondering "why this isn't on my
calendar." There's always a reason at the time (such as it conflicted at one
time with something else that is no longer on the calendar) but it is often
difficult to determine well after the fact.

I know that copies are retained in "Sent" items; however, I am wondering if
there is an easier way to track this information.

Thank you!

I'd love to know the answer to this as I get the very same thing.

What I'd do would be to create a second calendar called "Declined" and save
a copy of the appointment invitation in that calendar prior to declining it.
Declinations do not get recorded, to the best of my knowledge. The item
gets deleted.
