Is there a way to automatically respond to incoming messages that "I am away
until a certain date? "

Many ISPs offer this feature. It's impractical to do it with Outlook
Express.

But is this something you really want to do? Tell everyone that you're
not at home? Automatically respond to spam, thus generating more spam?
