what will OE users do when IE 7 is released?
Will OE continue to bundled with IE when IE 7 is released? If not, what
options do OE users have?

I'm sure someone else can correct me if I'm wrong, but I believe that

OE6 will continue to be used with IE7. Nothing special you need to do.
When the next version of Windows comes out (Windows Vista), OE will be replaced by a new program "Windows Mail".
