Email Signature in Outlook
Outlook, as in the subject line, or Outlook Express?

By "She replied and attached my message" I presume that you mean that
your original message is quoted in the body or her reply and not as a separate EML file attachment. If it's fine in your sent items, there's probably not much you can do about it. When she replies, she controls the formatting of the message, not you.
