Outlook 2007 Backup - Personal folder options
 
I am not given the option to choose sub-folders from my Personal Folder when
I go Backup. I only see the one box named Personal Folders rather than
multiple boxes that I can pick and choose from, so all folders are backed up
each time. How can I fix it so I can pick and choose the folders I want to
back up or transfer to my laptop?

You cannot, the free backup tool backs up, that is creates a copy of the
complete data file, and appends the name backup to that copy

Outlook 2007 Backup - Personal folder options
 
1) File- Backup...- Options...
2) Select a pst-file.
3) Set the path and name for your backup.
4) Repeat step 2 and 3 for each pst-file that you want to backup.
5) Press OK

Ah, reading your question a second time...
No, as DL already said, you cannot specify specific folders within a
pst-file. You either backup the entire pst-file or you don't backup at all.
