Close outlook, find the pst files and burn them using your burner software.
To open the location, before closing outlook, go to file, data file
management and select a pst then click open folder button to open windows
explorer to the pst location.

Assuming you mean PST files...

Right-Click on the Personal Folder and determine their location on the computer.
Example:
"C:\Documents and Settings\Lipman\Local Settings\Application
Data\Microsoft\Outlook\outlook.pst"

Close Outlook.

Open your favourite CD/DVD burning software (example: Roxio)
Choose to create a data disk.
Drag and Drop the file(s) on to the software or go through the software's process for
adding files/floders to be burned.

Burn the disk(s).

Note that it is a good idea not to allow the PST to grow larger than ~4.5GB such that it
can be be burned to a DVD.

To add to the two answers already given, do not burn your PST file to CD/DVD
at anything faster than 4x. You may find that it is unreadable if you burn
at a faster speed.
