Are you referring to the quoted To/From/Date/Subject fields or to entire
message header including all the IP addresses, server names, etc...? In case of the last; Outlook doesn't do this. Is this happening when replying to the message or when receiving it? Assuming the last, do you have a virus scanner installed which integrates itself with Outlook? Uninstall this integration part of your virus scanner and try again; you'd still be sufficiently protected by your on-access scanner part of the virus scanner.
