Default setting up customised contact address lists

How does one set up a list that can go in the "To" field that is received
and seen only as "Family" or similar without revealing all the names and
e-mail addresses to the recipients?

And consider using BCC if you want to hide individual e-mail addresses.

I personally am quite content to use BCC, that's all I ever do, but I have a
son who want's to know why, and so ............. :-) many thanks for your
