Default Reply and automatically save address of original sender

Doesn't Outlook automatically save the address of a new sender which you
reply to? Is there something that needs to be done to make this happen?

No way would you are anyone else want senders saved automatically.
You can save them yourself when you want: R click the address Add to
Contacts.
