Replace United States of America with short form USA in Contacts
 
Is there a way of setting up the 'United States of America' to just 'USA' in
the Country/Region field?

Not that I know of. Since that field is usually only used in written
documents, the better option would be to control how Outlook's address
information is inserted into Word documents.
